How does the clip attach to a cushion or upholstery?

The textile clip has a part that is sewn or stapled to the back of the fabric or cushion, and another that fixes to the support surface (timber, fibreglass, etc.). The cushion simply presses onto the fixing points and holds. To remove it, just pull by hand.

Can they hold the weight of a thick cockpit cushion?

Yes. TC clips are designed to support the weight of cushions and upholstery typical on boats. For very heavy or thick cushions, simply use more fixing points distributed across the surface.

Will the carpet lift in the wind while sailing?

That is exactly what they are designed for: they hold carpet or cushion firmly in place even with air currents or vibration, but allow removal with intentional pulling. They do not release accidentally.
